Cinnamon-Sugar Bread {Kanel Brød}



Just to celebrate being done with my bachelor thesis, and having a good friend over, I decied to try and new reciepe. And guess what!? It might just turn out to be one of my new favorites...

But if anything, trust me on this one: "You NEED to try this!"

It is good and sweet - goes excellent with coffee :)

And it is super easy to make!

Here is what you need:

1/3 cup of sugar
1 tablespoon cinnamon
1/4 cup melted butter
1 egg
1 cup brown sugar
1/4 oil
1 tablespoon vanilla
1 cup milk
2 cups flour
1 teaspoon cardamom
3/4 teaspoon baking soda
Pinch of salt

Turn on the oven at 175 degrees (350F), prepare a small loaf pan or container.

In a small bowl mix sugar and cinnamon and stir until it is well mixed.

Then melt the butter and let it cool, while you mix egg, brown sugar, oil and vanilla together. Mix in the butter and thereafter the milk, whisk it all well together.

Add flour, cardamom, baking soda and salt and stir until it all is combined.

Pour half of the batter into the container, sprinkle 3/4 of the cinnamon-sugar over the batter. Use the rest of the batter and sprinkle the last cinnamon-sugar over the bread.

Now let it bake for 45 to 55 minutes or until the top is firm and set.

Trust me, it is worth while waiting!

Just let it cool for 10 minutes before serving. Enjoy!

Bread from the StoneAge..

Okay, so my roomie showed me this recipe for bread without any flour. Sounds interesting? I think so!


And on the occasion of going on a weekend where I have to bring my own food. I took this opportunity of trying something new. And guess what. It turned out wonderful!
You should definitely try this!

It is very simple, all you need is:

100 g. Pumpkin seed
100 g. Sunflower seed
100 g. Almonds
100 g. Walnuts
100 g. Flax seed
100 g. sesame seed
5 eggs
1 dl. oil
2 teaspoon salt

And the instructions are:

1. Mix all the ingrediens together

2. Put it in a form

3. Bake it for 1 hour at 160 degrees

And that is all! Pretty easy :)And the result is amazing!

Blueberry-Maple Muffins

 
After a longer break, due to some serious thesis writing.. Or not.. I have now found a new and exciting recipe which I want to share with the rest of you :)

Blueberry-Maple Muffins (without any sugar!)

These muffins have a fresh taste but it is balanced with the sweetnes from the maple syrup.. Doesn't it sound good? Excited? Okay, lets get started!

Ingredients:

1 cup whole-wheat flour
3/4 cup flour
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup maple syrup
1 cup sour cream or cremfraiche (9%)
1 teaspoon vanilla
1 1/2 cup fresh blueberries


Ready? Okay, here we go!

First preheat the oven to 400 degrees F or 200 C.
Mix whole-wheat flour, flour, baking powder, cinnamon, baking soda and salt together in one bowl.

Then whisk eggs and maple syrup together until smooth, add cremfraiche and vanilla and whisk it all well together.

Stir the wet and dry ingredients together until it is moistened. Put in the fresh blueberries and scoop the batter into the muffins cups.

If you like, you can sprinkle the tops with sugar.

Bake the muffins until the tops are golden, it takes between 15 to 25 minutes.

So in the end, you can enjoy these wonderful blueberry muffins and just think it is without sugar! Maybe it calls for a second muffin..?
