"ENGLISH EDITION" - CINNAMON SPINS!

Every birthday calls for something special! And this is especially important when you away from home on your birthday!
So in order to celebrate my roommate's birthday - I baked these super-delicious-spongy CINNAMON SPINS! That is something quite unique and therefore perfect for a Birthday-celebration!

Now comes the recipe and ingredients - but all the measurements are in European. So to all the Americans: "sorry for the trouble with convert them into cups and so on!"

For 20 Cinnamon Spins:

For the dough:
750 G. flour
150 G. butter
75 G. sugar
1/2 teaspoon salt
1 Egg
50 G. yeast
5 deciliter milk

For the filling:
125 G. butter
125 G. sugar
2 tablespoons cinnamon

First: melt the butter and add the milk. When the temperature is like your finger, add the yeast - BUT NOT BEFORE! It is crucial you don't add the yeast when the milk is too hot! Otherwise you will ruin the effect of the yeast! (Own experience..)
Then add all the other things for the dough:
And mix it all together! Knead the dough until it is nice and flexible. Then let it rest for 30-40 minutes.

Meanwhile you can mix the filling:
Mix butter with sugar and cinnamon - and mix it all together. Do not despair! It isn't that hard to mix together! It just takes a little while:
Now: take the dough on the table with flour and roll it into a rectangle. Spread the filling on one half of the rectangle:
Fold the rectangle one third over and then fold it again:
Now: roll the dough again and then cut the numbers of cinnamon spins you like. In this case I chose to make small and big. After cutting into strips, you hold the strip in each end and twist it opposite each other:

Then you twist the strip into a bun. This can be done in many ways - so just be creative! After twisting the buns let them rest for 30 minutes. Before going in the oven, glaze them with one egg. Just to give the finishing touch ;)

Since I was making these for a birthday-girl, I chose to form some in forms. But you can do as you prefer :)

Put the cinnamon spins in the oven for 12 minutes at 225 Celsius. But watch them carefully! As it can easy be too warm for them..

And this turned out to be a perfect start for a birthday! So give it a try - and let me know what you think!
